Delectable Ham and Three-Cheese Cromesquis

½ package of Tour Eiffel Chopped Cooked Ham (200 g)
85 g soft goat cheese (1/3 cup)
85 g cream cheese (1/3 cup)
85 g feta cheese, crumbled (1/3 cup)
2.5 g ground cumin (½ tsp)
1.25 g cayenne pepper (¼ tsp)
15 g fresh thyme, finely chopped (1 tbsp)
(ample quantities of)
all-purpose flour
eggs, beaten
bread crumbs or panko
oil for frying
Chopped Cooked Ham


  1. In a bowl, mix all ingredients together with a fork.
  2. Shape mixture into walnut-sized balls (30 to 45 g each). Refrigerate for 30 minutes.
  3. Place the flour, eggs and crumbs each in a separate bowl. Season the crumbs with salt and pepper.
  4. Roll the balls in the flour, then the eggs and the crumbs. Refrigerate for 30 minutes, and then repeat two more times.
  5. Heat the oil to 175 °C (350 °F) and fry the balls until they are golden brown.
  6. Drain on paper towel and serve with a pesto coulis.
