Mini Ballottine Burgers

1 package of Tour Eiffel Ballottine (150 g) ‘any variety’
1 small red onion, thinly sliced
115 g parisian mushrooms, sliced (¼ lb)
15 g butter (1 tbsp)
1 log of goat cheese (125 g)
baby spinach, leaf lettuce or arugula
maple, port or other type of jelly
8 miniature hamburger buns


  1. In a frying pan, brown the onions and mushrooms in the butter. Season to taste with salt and pepper. Remove from heat and set aside.
  2. Toast or heat up the buns.
  3. Garnish one half of a bun with greens, a thick slice of Ballottine, goat cheese topped with jelly, mushrooms and onions. Top with the other half of the bun.

Note: There is no set recipe; this is simply a new way of enjoying your favourite Ballottine. Let your imagination be your guide! Create new flavour combinations by trying different condiments and garnishes.
