Turkey Quesadillas with Melted Cheese and Homemade Guacamole

1 package of Tour Eiffel Cooked Turkey Breast (175 g)
3 mashed avocados
1 seeded and diced Italian tomato
30 ml chopped coriander (2 tbsp)
30 ml cumin (2 tbsp)
1 seeded and diced jalapeño
10 ml lime juice (2 tsp)
10 ml red wine vinegar (2 tsp)
2 whole wheat tortillas
750 g Monterey Jack marbled cheese (1.65 lb)
4 cherry tomatoes, quartered


  1. Preheat oven to 190 °C (375 °F).
  2. Prepare the guacamole by combining the avocados, Italian tomato, coriander, cumin, jalapeño, lime juice and red wine vinegar in a bowl, and season with salt and pepper. Set aside.
  3. Lay 2 tortillas on a flat work surface. Place equal amounts of cheese, turkey and cherry tomatoes on each tortilla. Fold in half.
  4. In a non-stick pan on medium heat, lightly brown both sides of the quesadillas and place them on a cookie sheet lined with parchment paper. Heat in oven for 8 minutes.
  5. Serve with nachos and homemade guacamole.
